Brian's Crockpot Vegan Chili Recipe

(Cooking required)
3t Olive Oil
2lb Beyond Beef (Plant Based Ground)
1 Extra Large Yellow Onion Diced (or three small)
6 Cloves of Garlic Minced

(Straight into the crock pot, no cooking required!)
(1) 15oz can Kidney Beans (drained and rinsed)
(1) 15oz can Chili Beans (drained and rinsed)
(1) 28oz can Diced Tomatoes
(2) 15oz cans Tomato Sauce
(1) 4.5oz can Diced Green Chiles (not drained, we used mild)
(1) Red Pepper Diced
(1) Green Pepper Diced

(2T) Chili Powder
(2T) Unsweetened Cocoa Powder
(2.5t) Cumin
(1t) Paprika
(1t) Sugar
(1t) Corriander
Salt and Pepper to taste

You will need a large skillet, spatula, and an 8 Quart Crockpot for this recipe. 

Directions as follows:

Warm a large skillet on low to medium heat and oil with 2t of olive oil. The temperature depends on how hot your stovetop cooks, but if the temperature is too high the "meat" will stick. Brown the 2lb of Beyond Meat in the oiled skillet. Once the Beyond Meat has browned, place the browned "meat" into the crockpot.

Place the last teaspoon of olive oil in the skillet and sauté the chopped onion(s) until translucent. Toss the six cloves of garlic in with the onions once the onions are translucent and cook for another minute. Place the onion and garlic mixture in the crockpot with the "meat". 

Place all other ingredients (kidney beans, chili beans, diced tomatoes, tomato sauce, diced green chilies, red and green pepper, and all the spices) into the crockpot with the "meat", onion, and garlic. 

Seal the lid on the Crockpot and set the Crockpot to cook on low for six hours.

When the timer goes off your meal is done! You can garnish with you favorite chili garnish, but we enjoy this hearty chili as is.
